The Chestnut is known for being a very tannic wood, the same characteristic we find in its leaves, in addition to the various vitamins and minerals contained therein. They are not harvested all year round, but only in spring and summer to put them together with the cheese in earthenware jars to help make a very special refinement.
This cheese has changing characteristics from year to year, from batch to batch of production, but not only in the usual batch if we taste a shape that ages at the bottom of the container and one at the top of the container we will find two different cheeses. Obviously this is not a defect, but a characteristic of our typical way of aging in a traditional way.
Available only in a few periods of the year and with very limited quantities, it is possible, however, to make an annual production schedule.
Crust not edible.
Ingredients: Pasteurized sheep’s milk, live milk enzymes, rennet and salt. Surface treated with chestnut leaves.
Size: about 1.3 kg.
Packaging: in the vacuum bag.
Duration of the packaged product: 90 days.
ALLERGENS: Milk and milk proteins.
Product features:
Irregular cylindrical shape with irregular faces and sides due to the deformation of the same during the refinement phase;
OUTDOOR ASPECT, the rind is slightly wrinkled, moist and slightly sticky, also due to the vacuum, light brown in colour with the presence of chestnut mould and leaves that remain imprinted in the form during the maturing phase;
INTERNAL ASPECT: inside, the paste is white and pinstripe, even if the colour may tend to the pale straw yellow, with a darker nail present on the under-crost, there are no holes;
ODOR, intense and complex aroma, you can perceive beyond the lactic and vegetable sensations of fermented grass and undergrowth, fresh musk;
TASTE, is delicate and sweet but at the same time slightly salty and a low acidity, in some forms we can also find a bitter characteristic (given appnto by the leaves), has a good persistence in the mouth is grainy and crumbly.
Availability: limited and not always available.
Food pairings: excellent on a cheese plate, as an appetizer or to make tastings in a horizontal pecorino cheese dish.
Oenological pairings: full-bodied red wine with good structure.
