A cheese with a very delicate taste, with a white outer rind and a soft, slightly ivory-coloured paste.
It is matured for 25 to 30 days in rooms at 8-10°C and humidity of 90-95%, thanks to these conditions and to the microclimate inside the ageing room, the surface is covered with a white and velvety felt of Penicillium candidum: a microscopic fungus that gives the cheese the aroma and smell of a fresh mushrooms mushroom.

The rind is edible, but it is advisable to taste the paste first and then eat the rind as well to better understand how much this cheese improves if you also eat the surface.

 

Ingredients: Cow milk pasteurized, selected lactic acid bacteria, liquid calf rennet and salt.
Size: about 600 gr.
Packaging: individually wrapped form.
Duration of the packaged product: 45 days.

Product features:
Shape: irregular cylindrical shape with slightly concave faces on the inside and convex sides on the outside, a sign of the ripening and protection of the paste on the inside.
External appearance: flowery rind, also known as a feathery rind, white in colour;
Internal appearance: the paste is ivory-white, soft and tender with a slightly hinted nail, with irregular and uneven medium-fine holes;
Odour: on the nose, the first thing that emerges is a smell of fresh mushroom mushrooms, mainly due to the flowery rind, while inside the paste there are clear notes of cream, butter and walnut;
Taste: it has a sweet taste, not very savoury, slightly acidic and an aroma of undergrowth that increases in the finish, the paste slightly adhesive and lumpy.

 

Availability: almost always available.

Food pairings: excellent to be enjoyed in a cheese dish, but even more particular for hot preparations on appetizers, first or second courses as the inside of the dough melts, on the under crust tends to row slightly and the crust helps to give a unique aroma.

Oenological pairings: still or medium-structured white wine.
